Ingredients

  • 400g spaghetti
  • 200g pancetta or guanciale, diced
  • 4 large eggs
  • 100g Pecorino Romano cheese, grated
  • Black pepper, freshly ground
  • Salt, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente.
  2. While the pasta is cooking, heat a large pan over medium heat and cook the pancetta until crispy, about 5-7 minutes.
  3. In a bowl, whisk together the eggs, grated cheese, and a generous amount of black pepper.
  4. Drain the pasta, reserving a cup of pasta water. Add the hot pasta to the pan with pancetta.
  5. Remove the pan from heat and quickly toss in the egg mixture, stirring vigorously. Add pasta water as needed to create a creamy sauce.
  6. Serve immediately with additional cheese and black pepper.
